Food is my passion…Sunday Loaded Potato Skins

I was glancing through Pinterest and had a sudden urge to cook up some loaded potato skins. I had a bag of potatoes which were going to go off if I didn’t do something with them, cheese, bacon and sausages in the fridge.

First I scrubbed the Maria Piper potatoes clean and dried them on a tea towel. Brushing some oil and sprinkle with rock salt I stuck them in a pre heated fan oven at 180degrees. Check after an hour, turn them over if you like and poke a skewer in the centre of the potatoes to check it’s cooked through.

Let them cool down slightly and cut them in half. Scoop out the insides into a bowl and brush some olive oil on the inside and outside of the skins. These need to go back into the oven to crisp up both sides (I put them in for 4 minutes on each side)

While they’re crisping up, go back to the bowl of mash. I had already precooked bacon bits and sausage meat, split into two bowls I incorporate the mash to both of them and mix up well. If it’s a bit dry then add a drop of milk and a bit of butter as you would if you were making mashed potatoes.

If you wanted to put a twist on a vegetarian version then I would add mashed up falafel (YUM!) and top with cheese.

Take the potato skins out and fill up each one with the sausage and bacon mixtures. Top each one with some cheese (I used torn up mozzerella)

Place back in the oven and cook until the cheese on top melts and browns a little.

Take out of the oven and enjoy with sour cream dip!
